I’ve owned my Kyocera ceramic knife set for several years now, and they remain a staple in my kitchen. The standout feature is definitely the edge retention; they stay incredibly sharp far longer than traditional steel. I also love that the ceramic material prevents produce from browning after it’s cut.
To keep them in top shape, I’m careful to hand-wash and dry them immediately rather than tossing them in the sink. While they aren't meant for heavy-duty tasks like cutting through bone or pitted fruits—I still reach for my metal knives for those—they excel at almost everything else. I’m so happy with this set that I’ve even started gifting them to my close friends!
