I recently got an INNOVATIONwhite 6" Ceramic Nakiri Knife and wanted to share my thoughts on its functionality. The one I got is the version with the white blade. It's important to note that I work for Kyocera; however, I do not work in the same department responsible for manufacturing the knives. Despite this, I'll do my best to deliver an unbiased review based on my personal experience. While I'm far from being a culinary expert, I believe I can provide meaningful observations.
This knife is very sharp, making slicing and chopping vegetables a much simpler task. The flat blade design – as opposed to a curved one – results in more surface area contact with the cutting board. This distinction became especially apparent during a comparison with a regular kitchen knife while chopping cabbage. With the Nakiri knife, the increased contact area ensures that the cut is complete as the knife reaches the cutting board. There's no need for rocking or back-and-forth motions – the cut is clean and effortless. Now I understand how important the flat blade is, and I realized this only after comparing it with a curved blade.
While my association with Kyocera might raise concerns about bias, I'm genuinely impressed by the performance of this knife, especially after the experience of cutting cabbage. Based on my observations, I believe this knife can make chopping fun even for individuals who aren't culinary experts like me.
