I have to be transparent as I am an employee of Kyocera and have used Kyocera knives for years. I have several models that date back a couple of decades. I decided to buy the 3-piece set on IndieGoGo when it first launched and am giving a review on this 2-piece as it has the santoku and paring knife that I am using now. First of all, these knives at first impression were not what I expected. The handle is smaller but I can see how it works to my advantage as I do not have big hands. Secondly, I find the balance incredible and the sharpness of the blade on par with some of the original models that were a lot more expensive. I just always recommend a storage solution to protect the blades. They are not fragile but are made from a hard ceramic so you don't want them banging up against other tools. They are like fine instruments that work extremely well on any cutting task, and with care, can last a lifetime. I can attest to this as I've been a long-time cook using these knives. I am very excited to now own the latest in this technology, it's been fun!
